Cheesecake Blueberry Lemon Bake

If you are craving cheesecake, but don’t want all the calories and fat, try this amazing modified version made with cottage cheese, Greek yogurt and protein powder. Creamy and delicious with a fraction of the calories!
Ingredients:
1 cup Greek Yogurt
2 cups cottage cheese
2 eggs
1 tablespoon vanilla
1/2 cup vanilla protein powder
1 cup blueberries (fresh or frozen)
1 tablespoon lemon rind
1/4 cups lemon juice

Directions:
Preheat oven to 350 degrees.
Mix all of the ingredients together in a bowl except the berries. Blend with a submersion blender or add to mixer until smooth (Omit the lemon rind and juice if you prefer).
Add the berries and fold in.
Use parchment paper to line a 8x5 pan.
Add the creamy mixture to the pan and even it out until smooth.
Bake for 50 minutes or until slightly brown.
