Chocolate Chip Protein Loaf

This has become a family favorite. It’s a muffin recipe in the form of a loaf. Packed with protein, low in sugar and a great breakfast option or dessert. Made with cottage cheese and oatmeal, this treat will keep you craving more!


Ingredients:

Loaf:

  • 1 1/4 cup oatmeal

  • 1 cup cottage cheese

  • 2 eggs

  • 1 teaspoon salt

  • 1 teaspoon baking powder

  • 2 tablespoons agave

  • 1 tablespoon cinnamon

  • 1/4 cup semi-sweet chocolate chips

  • 1 tablespoon vanilla extract

Icing:

  • 1/2 cup Greek Yogurt

  • 1/4 cup vanilla whey protein powder

  • 1 teaspoon cinnamon



Directions:

  1. Preheat oven to 350

  2. Add all loaf ingredients to the blender except for the chocolate chips and blend until smooth.

  3. Add mix to a bread loaf and stir in chocolate chips.

  4. Bake for 22 minutes at 350 while you prepare icing.

  5. Using a small bowl, mix icing ingredients until smooth - set aside.

  6. Once loaf is finished, let cool and add icing.

  7. Makes 8 slices.
