This has become a family favorite. It’s a muffin recipe in the form of a loaf. Packed with protein, low in sugar and a great breakfast option or dessert. Made with cottage cheese and oatmeal, this treat will keep you craving more!
Ingredients:
Loaf:
1 1/4 cup oatmeal
1 cup cottage cheese
2 eggs
1 teaspoon salt
1 teaspoon baking powder
2 tablespoons agave
1 tablespoon cinnamon
1/4 cup semi-sweet chocolate chips
1 tablespoon vanilla extract
Icing:
1/2 cup Greek Yogurt
1/4 cup vanilla whey protein powder
1 teaspoon cinnamon
Directions:
Preheat oven to 350
Add all loaf ingredients to the blender except for the chocolate chips and blend until smooth.
Add mix to a bread loaf and stir in chocolate chips.
Bake for 22 minutes at 350 while you prepare icing.
Using a small bowl, mix icing ingredients until smooth - set aside.
Once loaf is finished, let cool and add icing.
Makes 8 slices.
