Cinnamon & Sugar Donut Cakes

Ingredients:

Muffins:

  • 3/4 cup Coconut flour

  • 1/2 cup Protein powder

  • 3/4 cup Sweetener of choice

  • 1 tsp Cinnamon

  • 1/2 tsp Salt

  • 1 tsp Baking soda

  • 1 tsp Baking powder

  • 4 eggs

  • 3/4 cup Applesauce

  • 1/2 cup Maple syrup

  • 1 tsp White vinegar

Coating:

  • 1/4 cup Sweetener of choice

  • 1 tsp Cinnamon



Directions:


  1. I use Lakanto Monk fruit maple syrup. You can also use honey.

  2. The estimated total time to make this recipe is 25-30 Minutes

  3. Preheat oven to 350 degrees. Spray muffin tin with non-stick cooking spray, or line with parchment paper muffin liners. Place all of the dry ingredients in a bowl, and mix until mixture is smooth. Add wet ingredients and continue to stir until combined. Divide mixture evenly between 12 muffin tins. Bake for 18-23 minutes for oat flour version, or 25-28 minutes for the grain-free version, or until toothpick comes out clean.

  4. Remove from the oven and let cool. Once cooled, mix sweetener and cinnamon in a small bowl and roll muffins in mixture until coated.




Makes 12 cakes

3 cakes per serving
