Cobb Chicken Salad Sandwich

  • 2 High fiber wraps

  • 1/4 cup Greek yogurt

  • 1/2 tsp Mustard

  • Pinch Salt and pepper

  • 1/2 cup Cooked chicken breast (8oz)

  • 1 Egg

  • 2 slices Bacon

  • 1/4 Red onion

  • 1/2 cup Shredded lettuce

  • 1/2 cupShredded lettuce

  • 1/4 cup Feta cheese

In a small bowl, combine yogurt, mustard, salt, pepper, chicken, bacon, egg, and onion. Mix until everything is well combined.

Top each wrap with 1/2 of the chicken salad, followed by the tomato slices, and lettuce, (and avocado slices and blue cheese if desired), dividing the ingredients evenly between the two sandwiches.

Roll up wraps. Cut in half if desired. Skewer each half with a toothpick to hold the sandwich together? Or wrap in foil if packing for lunch!
