PIE INSTRUCTIONS

Ingredients:

  • 4 large eggs

  • 1 cup cottage cheese (blend for a smoother texture, if desired)

  • 1 cup almond flour

  • 32 oz pumpkin puree (unsweetened)

  • 1/4 cup cornstarch

  • 1 tsp baking soda

  • 1 tsp baking powder

  • 1 tbsp ground cinnamon

  • 1 tbsp pumpkin spice

  • 1 tbsp ground cloves

  • 1/2 cup honey or agave syrup (adjust sweetness to taste)


Cooking Instructions:

  1. Preheat the oven:

    • Set your oven to 350°F (175°C). Grease a 9-inch pie dish or line it with parchment paper.

  2. Prepare the wet ingredients:

    • In a large mixing bowl, whisk the 4 eggs until slightly frothy.

    • Blend the cottage cheese (optional for a smoother texture) and add it to the eggs.

    • Mix in the honey or agave syrup and the pumpkin puree until well combined.

  3. Mix the dry ingredients:

    • In a separate bowl, combine the almond flour, cornstarch, baking soda, baking powder, cinnamon, pumpkin spice, and ground cloves. Whisk to distribute the spices evenly.

  4. Combine wet and dry ingredients:

    • Gradually add the dry ingredients into the wet mixture. Stir until smooth and fully incorporated.

  5. Pour into the pie dish:

    • Transfer the batter to the prepared pie dish. Use a spatula to smooth the surface evenly.

  6. Bake:

    • Place the pie in the oven and bake for 50-60 minutes, or until the center is set and a toothpick inserted into the middle comes out clean.

  7. Cool:

    • Remove the pie from the oven and let it cool completely at room temperature before slicing. For best results, refrigerate for at least 2 hours for a firmer texture.

  8. Serve:

    • Slice into 8 equal portions and enjoy as is or with a dollop of whipped cream or Greek yogurt on top! This is meant for a dessert and not a meal!

Add a dollop of creamy goodness to your desserts with this simple, flavorful homemade whipped cream! It’s perfectly sweetened with maple syrup and enhanced with a hint of cinnamon for a cozy twist.

Ingredients:

  • 2 cups heavy whipping cream

  • 1 teaspoon ground cinnamon

  • 2 tablespoons maple syrup

Instructions:

  1. Chill your mixing tools:

    • Place your mixing bowl and beaters (or whisk attachment) in the freezer for about 10 minutes. This helps the cream whip faster.

  2. Combine ingredients:

    • In the chilled bowl, pour in the heavy whipping cream.

    • Add the maple syrup and cinnamon.

  3. Whip the cream:

    • Using a hand mixer or stand mixer, beat on medium-high speed until soft peaks form. This usually takes 3-5 minutes.

    • Be careful not to over-whip, as the cream can turn grainy or into butter.

  4. Taste and adjust (optional):

    • If you prefer it sweeter, add a little more maple syrup and mix briefly to incorporate.

  5. Serve immediately:

    • Use as a topping for pies, pancakes, coffee, or any dessert.

  6. Store leftovers:

    • Keep any leftover whipped cream in an airtight container in the refrigerator for up to 2 days. Whip briefly before serving if it deflates.
