Loaded Mediterranean Sandwich

• 2 slices bread of choice • 1 tablespoon cilantro jalapeno hummus

• 1 whole leaf fresh lettuce • 1/4 cup sprouts (optional) • 2 thin slices tomato • 2 thin slices cucumber • Thinly sliced red onion • 50 grams of avocado • 3 ounces lunchmeat of choice • 2 multicolored peppers, chopped


Directions:

Toast bread, if desired. Spread both slices of bread with hummus. Then layer on lettuce, sprouts, tomato, cucumber, red onion, avocado, and peppers. Add lunchmeat. Slice sandwich in half and serve.
