Cottage Cheese Snickerdoodle Muffins are a high-protein twist on the classic cinnamon-sugar treat. These muffins combine the rich, creamy texture of cottage cheese with warm spices to create a satisfying snack or breakfast option. With added protein and a soft, moist crumb, they make a great alternative to traditional muffins while keeping the comforting flavors of a snickerdoodle cookie.

Snicker Doodle Muffins
1/4 cup coconut oil (melted. may sub any other oil or butter)
1/2 cup coconut sugar (may sub cane sugar or monk fruit sweetener)
1 tsp vanilla bean paste or vanilla extract
1 cup plain whole milk cottage cheese
1/2 cup Greek Yogurt
2 eggs
1.5 cups all purpose flour (can sub gluten free flour blend)
1 tsp baking soda
1/4 tsp salt
1/2 tsp ground cinnamon
Topping:
1/4 cup coconut sugar
2 tablespoons unsweetened applesauce
1 tbsp all purpose flour
2 tsp ground cinnamon

Directions:
Combine The Ingredients
Add the melted coconut oil, coconut sugar, yogurt, vanilla, milk, and eggs to a large bowl and whisk well to combine. Add the cottage cheese, then introduce the flour, baking soda, salt, and cinnamon into the bowl. Use a rubber spatula to fold until incorporated.
Preheat oven to 350 degrees and lightly spray muffin tins.
Make The Topping
Place the coconut sugar, applesauce, flour, and cinnamon in a bowl and mix to combine.
Bake
Use a double cookie scoop to add the batter to the prepared pan and crumble the topping over the muffins. Bake your snickerdoodle muffins recipe for 23-25 minutes. Let them cool slightly and enjoy!
Makes 12 muffins. Serving size 2 muffins.
Notes:
Mix very gently: You’ll notice on the recipe card that I indicate to fold the ingredients together until just combined. Overmixing can lead to dense and tough results as you run the risk of overdeveloping the gluten in the flour. Use a gentle hand.
Press the topping into the tops of the muffins ever so slightly before popping them in the oven. It will help it stay in place while they bake and rise.
Cool completely: Be sure to let your snickerdoodle muffins cool completely before you remove them from the liners. They won’t stick as much!
