Chicken casseroles are a weeknight staple at our house. I am always thinking of ways to change them up so we don’t get bored with the same old thing. This Million Dollar Chicken Casserole is a healthier version of the pot-luck classics you may see at parties. This casserole is super simple to make and tastes like a million bucks! Serve the casserole with some steamed veggies and a complex carb and dinner is done!!
Serves 6
1.25 lbs chicken breasts
2 (10 oz) bags cauliflower rice
2 cups greek yogurt
1/4 cups parmesan cheese
1/2 cups shredded cheese
1 tsp garlic powder
Topping
1/2 cups shredded cheese
1/4 cups turkey bacon* optional
2 green onion* optional
Instructions
Preheat the oven to 425 degrees. Spray a 9x13 baking dish with cooking spray.
Place the cauliflower rice in the microwave or in a skillet, heating through until rice is tender. (If using rice or another veggie, cook until tender).
In a small bowl, mix yogurt, seasonings, and cheeses.
Place chicken and cauliflower rice in a baking dish.
Mix in the Greek yogurt mixture until everything is combined. Top with shredded cheese.
Bake for 30-35 minutes or until chicken is cooked through (165˚F internal temperature).
Broil for 2-5 minutes to brown the top.
Remove from the oven and garnish with bacon and green onions if desired.
