Beef Taquitos

These Beef Taquitos are a crispy, satisfying twist on a classic favorite—made with seasoned ground beef, melty cheese, and rolled into corn tortillas for the perfect handheld meal or snack. Baked or air-fried to golden perfection, they’re a healthier alternative to traditional fried taquitos without sacrificing flavor. Perfect for meal prep, game day, or a quick family dinner, these taquitos are easy to make, packed with protein, and absolutely delicious dipped in salsa, guacamole, or Greek yogurt.
Ingredients:
1 lb lean ground beef
1 (1 oz) package taco seasoning
4 oz Greek yogurt cream cheese
1/2 cup salsa
1/2 cup Greek yogurt
1 cup shredded cheese
9 tortillas

Directions:
Preheat the oven or air fryer to 375 degrees.
Cook the ground meat in a large skillet over medium-high heat until it is no longer pink, breaking it apart as it cooks. Add the taco seasoning and stir to combine.
Add the cream cheese and salsa, stirring until cream cheese is melted. Stir in the Greek yogurt and shredded cheese and remove from the stove.
Heat the tortillas in the microwave for 10-20 seconds to soften.
Place two heaping tablespoons of filling on each tortilla, and then wrap it into a tight roll. Place the rolled tortilla seam-side down on a baking sheet lined with parchment paper (or into the air fryer basket). Repeat until all the filling and tortillas have been used.
Serve with your favorite taco toppings and a healthy fat.
OVEN: Spray tortillas with cooking spray. Bake until the tortillas are crispy, about 5-10 minutes.
AIR FRYER: Place however many taquitos you can fit in the air fryer basket while leaving a little bit of space in between each. Spray tortillas with cooking spray. Cook for 5-10 minutes, until tortillas are crispy. Repeat, cooking in batches (if needed).
