Best Sweet Corn Chowder

Sweet Corn Chowder with Cottage Cheese and Chicken

This delicious sweet corn chowder is a comforting dish that combines the sweetness of corn with the creaminess of cottage cheese and the heartiness of chicken and hominy. Perfect for a cozy family dinner, this recipe serves six and is sure to warm your soul. Enjoy the delightful flavors and textures as you savor each spoonful!

Ingredients

  • 2 cups sweet corn (fresh or frozen)

  • 1 cup hominy, drained and rinsed

  • 2 cups cooked chicken, shredded

  • 1 cup cottage cheese

  • 1 medium onion, diced

  • 2 cloves garlic, minced

  • 4 cups chicken broth

  • 2 medium potatoes, peeled and diced

  • 1 teaspoon cumin

  • 1 teaspoon paprika

  • Salt and pepper to taste

  • 2 tablespoons olive oil

  • Optional: 4 slices turkey bacon for topping

  • Chopped fresh cilantro or parsley for garnish (optional)



Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.

  2. Add the minced garlic and cook for an additional minute, stirring frequently.

  3. Stir in the diced potatoes, corn, hominy, cumin, and paprika. Cook for another 2-3 minutes.

  4. Pour in the chicken broth and bring to a boil. Reduce heat and let simmer until the potatoes are tender, about 15-20 minutes.

  5. Add the shredded chicken and blended cottage cheese to the pot. Stir well to combine and heat through, about 5 minutes.

  6. Season with salt and pepper to taste. If desired, use an immersion blender to blend a portion of the chowder for a creamier texture, but leave some chunks for heartiness.

  7. Serve hot, garnished with bacon, chopped cilantro or parsley if desired.

  8. Serves 6
