Cheeseburger Casserole

A Comforting, High-Protein Classic


Craving the flavors of a juicy cheeseburger without the bun? This Cheeseburger Casserole is the perfect high-protein, low-carb alternative that delivers all the rich, savory goodness in a hearty, easy-to-make dish. With seasoned ground beef, melted cheese, and a creamy sauce, this casserole is a family-friendly meal that’s both comforting and nutritious!


Ingredients:

  • 1.5 lbs ground beef

  • 1 small onion, diced

  • 2 cloves garlic, minced

  • 1 can (14.5 oz) diced tomatoes, drained

  • 1/2 cup tomato sauce

  • 1 tbsp yellow mustard

  • 1 tsp Worcestershire sauce

  • 1 tsp salt

  • 1/2 tsp black pepper

  • 1/2 tsp smoked paprika

  • 1/2 tsp garlic powder

  • 1/2 cup plain Greek yogurt or sour cream

  • 1 cup shredded cheddar cheese

  • 3 large eggs

  • 1/2 cup unsweetened almond milk (or regular milk)

  • 1/4 cup grated Parmesan cheese

  • 1/2 tsp baking powder

  • 1/2 cup almond flour (or regular flour if preferred)

  • Optional: chopped pickles or crumbled bacon for topping



Directions:


  1. Preheat & Prep

- Preheat your oven to 375°F (190°C)

- Grease a 9x13-inch baking dish and set aside.


2. Cook the Beef Mixture

- In a large skillet over medium heat cook the ground beef until browned.

- Add the diced onion and garlic, cooking for another 2-3 minutes until fragrant.

- Stir in the diced tomatoes, tomato sauce, mustard, Worcestershire sauce, salt, pepper, smoked paprika, and garlic powder.

- Simmer for 5 minutes then remove from heat.


3. Create the Creamy Layer

- Stir in the Greek yogurt and 1/2 cup shredded cheddar cheese into the beef mixture until well combined.


4. Prepare the Batter

- In a medium bowl, whisk together the eggs, almond milk, Parmesan cheese, baking powder, and almond flour until smooth.


5. Assemble the Casserole

- Spread the beef mixture evenly in the baking dish.

- Pour the batter mixture over the top, spreading it out evenly.

- Sprinkle with the remaining 1/2 cup of shredded cheddar cheese.


6. Bake & Serve

- Bake for 25-30 minutes, or until the top is golden brown and set.

- Let cool for 5 minutes before slicing.

- Top with chopped pickles or crumbled bacon for extra cheeseburger flavor!
