Cottage Cheese Blueberry Bake

Ingredients

  • 1 cup cottage cheese

  • 1 cup fresh blueberries

  • 2 large eggs

  • 1/4 cup honey or maple syrup

  • 1 teaspoon vanilla extract

  • 1 cup almond flour

  • 1 teaspoon baking powder

  • 1/4 teaspoon salt

  • Optional: 1/4 teaspoon cinnamon for extra flavor



Directions:

  1. Preheat your oven to 350°F (175°C) and grease a baking dish.

  2. In a mixing bowl, combine the cottage cheese, eggs, honey or maple syrup, and vanilla extract. Mix until well combined.

  3. In another bowl, mix the almond flour, baking powder, salt, and cinnamon (if using). Gradually add the dry ingredients to the wet mixture and stir until just combined.

  4. Gently fold in the fresh blueberries, being careful not to crush them.

  5. Pour the batter into the prepared baking dish and bake for 25-30 minutes or until golden brown and a toothpick inserted in the center comes out clean.

  6. Allow to cool slightly before slicing and serving. Enjoy it warm or at room temperature!


Makes 6 pieces.

Serving size 2 slices for a complete meal.
