Creamy Cottage Cheese Lemon Mousse

Cottage cheese is a powerhouse ingredient that often gets overlooked for its versatility. Packed with protein, low in fat, and naturally creamy, it's a perfect base for both savory dishes and sweet treats. In this recipe, we’re turning humble cottage cheese into a decadent *creamy cottage cheese mousse*—a dessert that feels indulgent but is secretly nutritious.


With its smooth texture and slightly tangy flavor, cottage cheese blends beautifully to create a luscious, airy mousse that’s quick to make and completely guilt-free. Whether you're looking for a post-dinner treat or a satisfying snack, this mousse will hit the spot. Let’s dive in!


Ingredients

  • 2 cups cottage cheese

  • 1/4 cup maple syrup or more to taste

  • 2 tbsp lemon zest

  • 2 tbsp lemon juice

  • 1/2 tbsp gelatin powder

  • 3 tbsp water

  • 1 tsp vanilla extract optional

  • 1/4 slivered almonds



Directions:

  • In a small bowl, combine gelatin powder and water. Stir well until the gelatin powder is completely dissolved. Set it aside to bloom for about 5 minutes.

  • After blooming, gently heat the gelatin mixture in a microwave for 15-20 seconds or on the stove over low heat until it becomes liquid. Ensure it doesn't boil.

  • In a blender or food processor, add the cottage cheese, maple syrup, lemon zest, lemon juice, almonds, vanilla extract and the warm gelatin mixture. Blend until smooth and creamy.

  • Taste the mixture and adjust the sweetness or lemon flavor according to your preference by adding more maple syrup or lemon juice if necessary. Blend again.

  • Pour the mixture into serving cups or bowls and refrigerate for at least 2-3 hours or until the mousse has set.

  • Once set, remove the mousse from the refrigerator. Garnish with additional lemon zest, and enjoy the refreshing and creamy dessert!
