Cottage cheese is a powerhouse ingredient that often gets overlooked for its versatility. Packed with protein, low in fat, and naturally creamy, it's a perfect base for both savory dishes and sweet treats. In this recipe, we’re turning humble cottage cheese into a decadent *creamy cottage cheese mousse*—a dessert that feels indulgent but is secretly nutritious.
With its smooth texture and slightly tangy flavor, cottage cheese blends beautifully to create a luscious, airy mousse that’s quick to make and completely guilt-free. Whether you're looking for a post-dinner treat or a satisfying snack, this mousse will hit the spot. Let’s dive in!
Ingredients
2 cups cottage cheese
1/4 cup maple syrup or more to taste
2 tbsp lemon zest
2 tbsp lemon juice
1/2 tbsp gelatin powder
3 tbsp water
1 tsp vanilla extract optional
1/4 slivered almonds

Directions:
In a small bowl, combine gelatin powder and water. Stir well until the gelatin powder is completely dissolved. Set it aside to bloom for about 5 minutes.
After blooming, gently heat the gelatin mixture in a microwave for 15-20 seconds or on the stove over low heat until it becomes liquid. Ensure it doesn't boil.
In a blender or food processor, add the cottage cheese, maple syrup, lemon zest, lemon juice, almonds, vanilla extract and the warm gelatin mixture. Blend until smooth and creamy.
Taste the mixture and adjust the sweetness or lemon flavor according to your preference by adding more maple syrup or lemon juice if necessary. Blend again.
Pour the mixture into serving cups or bowls and refrigerate for at least 2-3 hours or until the mousse has set.
Once set, remove the mousse from the refrigerator. Garnish with additional lemon zest, and enjoy the refreshing and creamy dessert!
