You know that feeling when you really want something sweet, but you want to keep it simple? I have created two simple recipes using SUPERFOODS that you can whip up in a jiffy!
What is a SUPERFOOD?
A non-medical term popularized in the media to refer to foods that can have health-promoting properties such as reducing one's risk of disease or improving any aspect of physical or emotional health. So-called superfoods may have an unusually high content of antioxidants, vitamins, or other nutrients.
I got to thinking... what if I created a SUPERFOOD cookie that could be made easily with healthy ingredients and that could be always "on-hand". Even better... my SUPERBRAIN came up with two, and you can mix and match the ingredients to create additional variations! All five of the ingredients can be kept on hand at all times. Bananas can be frozen in ziplocks (remove skin first) so you are ready to SUPERBAKE these SUPER-AMAZING SUPERCOOKIES!
THE BANANAS
If you are into chewy… you are into the bananas in this recipe. I love cookies that are chewy because they stay soft if you don’t eat them right away! Is there anything worse than a hard cookie?! These bananas do two things: They act as an emulsifying agent – what eggs usually do, they provide the sweet – what sugar usually does.
THE PUMPKIN
This SUPERFOOD is rich in vitamins, minerals, and antioxidants, pumpkin is incredibly healthy. What's more, its low-calorie content AND HIGH IN FIBER which makes it a weight-loss-friendly food. Its nutrients and antioxidants may boost your immune system, protect your eyesight, lower your risk of certain cancers and promote heart and skin health.
THE PEANUT BUTTER
Peanut butter yum yum! This is a healthy fat that can be added to the Banana Oat Cookie if desired for an extra protein punch . Simply replace 1/2 banana with a 1/2 cup of peanut butter for another variety. Want to save some calories or allergic to nuts? You can also omit the peanut butter from the Pumpkin Cookie and add 1/4 cup of applesauce, pumpkin puree or a 1/2 banana in its place .
THE CINNAMON
This magic spice can add flavor and 🍁🍂AUTUMN 🍂🍁 to any recipe. Cinnamon contains large amounts of highly potent antioxidants. The antioxidants in cinnamon have anti-inflammatory effects, which may help lower your risk of disease. It can be added or omitted to either recipe based on your tastebuds!
THE OATS
In these recipes, oats are used in place of flour. They give the cookies a more robust flavor and provide a little bit of bulkiness. Oats are whole grain and provide fiber, helping you feel more satisfied! You can use quick oats or traditional, but steel-cut oats will not work here.
THE CHOCOLATE
Okay – now this just goes without saying. In my book… it’s not dessert if there’s not chocolate involved! I love the flavor and texture! I prefer semi-sweet chips in this recipe because milk chocolate chips make it a little too sweet. You could also try dark chocolate chips.
BANANA CHOCOLATE OAT SUPERCOOKIES
Ingredients
2 ripe bananas
3/4 cup old fashioned oats
1/4 cup semi-sweet chocolate chips
Directions
• Preheat oven to 350°F.
• Peel bananas and add to medium-sized mixing bowl. Mash well with a fork.
• Add oats and incorporate well. Mixture will appear very moist but be able to maintain a bit of shape.
• Mix in chocolate chips.
• With a spoon or scooper, drop onto cookie sheet. Cookie "doughs" should be about 3/4" x 3/4". Bake for 12 to 14 minutes (12 minutes if you prefer "gooey" cookies, 14 minutes if you prefer firmer cookies). Remove from cookie sheet and let them cool about 10 minutes before enjoying.
Recipe Notes
These cookies are best enjoyed the day they are made or the day after. Cookies may seem harder on the second day if they're baked too long, but will remain moist if they are a little "gooey" when removed from the oven.
These cookies are so easy to make and only require 5 ingredients: pumpkin puree, oats, banana, peanut butter and cinnamon. They’re all healthy, simple ingredients.
PEANUT BUTTER PUMPKIN SUPERCOOKIES
Ingredients
3/4 cup pumpkin puree
2 cups old fashioned oats
1/2 banana
1/2 cup peanut butter
1 teaspoon cinnamon (or pumpkin pie spice)
chocolate chips or sugar-free chocolate *optional but mandatory 😂
Instructions
•Preheat oven to 350 degrees.
•Prepare 2 baking sheets with nonstick spray.
•Add pumpkin, oats, banana, peanut butter and cinnamon in a large bowl and mix well for about 30-60 seconds.
•Form the dough into tablespoon-size balls. The dough should be sticky. To make balls easier to roll with sticky dough, lightly wet your fingers. Place on cookie sheets. Gently press down each cookie with your fingers or spoon. You don't want to squash them you just want to flatten them into a cookie shape. Add chocolate chips (about 3-4...or 8 🤭) on top of each cookie. Bake for 15-17 minutes.
