Spaghetti Squash Chicken Broccoli Bowl

This Spaghetti Squash Chicken Broccoli Bowl is a healthy and delicious meal that combines the unique texture of spaghetti squash with tender chicken and vibrant broccoli. Ingredients

  • 1 medium spaghetti squash

  • 2 boneless, skinless chicken breasts

  • 2 cups broccoli florets

  • 3 tablespoons olive oil

  • 2 cloves garlic, minced

  • Salt and pepper to taste

  • 1 teaspoon Italian seasoning (optional)

  • 1/2 cup Parmesan cheese (optional)




Instructions

  1. Preheat your oven to 400°F (200°C).

  2. Cut the spaghetti squash in half lengthwise and scoop out the seeds. Drizzle 1 tablespoon of olive oil over the cut sides and season with salt and pepper. Place cut-side down on a baking sheet and roast for about 30-40 minutes, or until tender.

  3. While the squash is roasting, season the chicken breasts with salt, pepper, and Italian seasoning. Heat 1 tablespoon of olive oil in a skillet over medium heat. Add the chicken and cook for about 6-7 minutes per side, or until cooked through. Remove from the skillet and let it rest before slicing.

  4. In the same skillet, add the remaining tablespoon of olive oil and sauté the minced garlic for about 30 seconds. Add the broccoli florets and cook for 3-4 minutes, or until tender but still bright green.

  5. Once the spaghetti squash is done, use a fork to scrape the flesh into strands. Combine the spaghetti squash, sliced chicken, and sautéed broccoli in a large bowl.

  6. Toss everything together, adjusting the seasoning with additional salt and pepper if needed. Add optional toppings such as cheese. Serve warm and enjoy your healthy Spaghetti Squash Chicken Broccoli Bowl!
