Ingredients
1 large tortilla burrito size
2 eggs
1/4 tsp salt
1/8 teaspoon black pepper
1/4 teaspoon garlic powder
1/2 cup cottage cheese
1 cup spinach torn into small pieces
1/4 cup red pepper diced into 1/2 inch pieces
1/4 cup mild cheddar cheese shredded

Instructions
Preheat oven to 350º F and grease a 9-inch pie pan with cooking spray.
In a mixing bowl, beat the eggs with the salt, black pepper and garlic powder until fluffy.
Add in the red peppers, spinach, cottage cheese, and cheddar cheese, mix until well blended.
Place the tortilla into the prepared pie pan and press into the bottom. Pour in the egg mixture evenly into the tortilla.
Bake for 20-25 minutes, until the cheese is melted and tortilla is golden brown.
