Blueberry Quinoa Breakfast

Start your morning with this Blueberry Quinoa Breakfast Bowl, a nutrient-dense, high-protein mealthat keeps you fueled and satisfied!


Packed with protein-rich quinoa, juicy blueberries, and a hint of natural sweetness, this wholesome bowl is perfect for meal prep or a quick, energizing breakfast. It’s a great alternative to oatmeal, offering fiber, antioxidants, and sustained energy to power your day.


Ingredients:

  • 1 cup uncooked quinoa

  • 1 cup water

  • 1 cup milk (preferably raw cow’s milk or homemade almond milk)

  • 1/4 cup vanilla protein powder

  • 1/2 tsp. cinnamon

  • 2 cups frozen (or fresh) blueberries

  • 1/3 cup almonds or pecans, chopped

  • maple syrup, for drizzling



Directions:

  1. Rinse quinoa in a fine mesh colander to remove the saponins (we don’t want bitter tasting quinoa). Combine quinoa, water, milk, and cinnamon in a saucepan and bring to a boil. Reduce heat and simmer for 15-20 minutes (until most of the liquid has been absorbed).

  2. Meanwhile, toast almonds or pecans in the toaster oven at 350 F for 5-6 minutes.

  3. Remove quinoa from heat and let stand for an additional 5 minutes. Stir in blueberries and protein powder

  4. Portion into bowls and garnish with nuts and a drizzle of maple syrup.

  5. Serves 2
