Chili-Lime Sweet Potato Gratin

Ingredients:


• 3 large sweet potatoes (peeled and thinly sliced)

• 1 cup cottage cheese

• 2 tablespoons olive oil

• 1 lime (zested and juiced)

• 2 teaspoons chili powder

• 1 teaspoon smoked paprika

• 1/2 teaspoon cumin

• 1 teaspoon garlic powder

• Salt and pepper (to taste)

• 1/2 cup shredded cheese (optional, for a cheesy twist; mozzarella or Monterey Jack work well)

• Fresh cilantro (chopped, for garnish)


Instructions:


1. Preheat Oven:

Preheat your oven to 375°F (190°C). Lightly grease a baking dish.

2. Prepare Sauce:

In a bowl, mix the cottage cheese (Use a blender to blend the cottage cheese until smooth ), lime juice, lime zest, olive oil, chili powder, smoked paprika, cumin, garlic powder, salt, and pepper. Whisk until smooth and set aside.

3. Layer Sweet Potatoes:

Arrange the sweet potato slices in overlapping layers in the baking dish.

4. Pour Sauce:

Evenly pour the spiced chili-lime mixture over the sweet potatoes, making sure the sauce seeps between the layers.

5. Bake:

Cover with foil and bake for 40 minutes. Remove the foil, sprinkle with cheese (if using), and bake for an additional 15-20 minutes, or until the sweet potatoes are tender and the top is golden.

6. Garnish:

Sprinkle with fresh cilantro before serving for a burst of color and flavor.

Serves 8-10

• For extra spice, add a pinch of cayenne pepper to the sauce.

• Serve as a side dish to grilled chicken, fish, or roasted vegetables.
