Cobb Chicken Salad

This Cobb Chicken Salad is a hearty, protein-packed meal that brings together all the classic flavors you love—grilled chicken, crispy bacon, creamy avocado, hard-boiled eggs, juicy tomatoes, and crumbled blue cheese over a bed of crisp greens. Drizzled with your favorite dressing, it’s a satisfying mix of textures and nutrients, perfect for lunch or dinner. Easy to prep and endlessly customizable, this salad is a go-to for clean, filling meals that don’t skimp on flavor.

Ingredients:

For The Chicken:

  • 1 1/2 lb chicken breast

  • 1 teaspoon salt

  • 2 cups water

For The Salad:

  • 3 eggs -hard boiled 

  • 2 pieces of bacon

  • 1/2 cup Greek yogurt

  • 1 teaspoon salt

  • 1/2 teaspoon pepper

  • 1 red onion diced

  • 1/4 cup feta, blue cheese or Gorgonzola cheese

  • 2 avocados sliced

  • 4 cups greens such as spinach or lettuce




Directions:

  1.  In a crockpot, add in the chicken breasts, salt, and water. Cover and cook on low for about 4-6 hours, or high 2-3 hours (or until cooked through and tender). Once chicken is cooked, remove from the crockpot and let cool. Shred (or cut chicken however you like yours in your chicken salad). Add the chicken to a large mixing bowl.

  2. Add the rest of the ingredients in the bowl with the chicken and toss everything together until combined. Serve in a bowl, on a salad, a piece of toast, or with crackers. Enjoy!
