Ingredients

  • 2 cups cooked chicken, shredded

  • 1 ripe avocado, diced

  • 1 cup corn (canned or cooked)

  • 1 cup black beans or kidney beans, drained and rinsed

  • 2 cups mixed greens (such as romaine or spinach)

  • 1/2 cup cherry tomatoes, halved

  • 1/4 cup red onion, finely chopped

  • 1/2 cup shredded cheese (cheddar or Mexican blend)

  • 1/2 cup Greek yogurt

  • 2 tablespoons taco seasoning

  • Juice of 1 lime

  • Salt and pepper to taste

  • Optional - 10 corn tortilla chips crumbled



Instructions

  1. In a large bowl, combine the shredded chicken, corn, black beans, diced avocado, cherry tomatoes, red onion, and mixed greens.

  2. In a separate bowl, mix the Greek Yogurt, taco seasoning, lime juice, salt, and pepper until well combined to create the creamy dressing.

  3. Pour the creamy dressing over the salad mixture and gently toss to coat all the ingredients evenly.

  4. Top the salad with shredded cheese and additional avocado slices if desired. Add crumbled chips if desired.
